Healthy Recipe: Chow-Style BBQ Sandwich

TORONTO - This sandwich captures the essence of Asian and Indian flavours. The basil, mint, cilantro, ginger, lime and soy sauce are fused with the popular Indian spices of turmeric and cumin. This will soon become a favourite with your family and friends!

Ingredients
  • 1 Tbsp canola oil (15 mL)
  • 1/4 tsp cumin (1.25 mL)
  • 1/4 tsp turmeric (1.25 mL)
  • 2 Tbsp basil (30 mL)
  • 2 Tbsp mint (30 mL)
  • 2 Tbsp cilantro (30 mL)
  • 1 Tbsp ginger, fresh, chopped (15 mL)
  • 1 Tbsp garlic, chopped (15 mL)
  • 4 tsp soy sauce (20 mL)
  • 1 Tbsp lime juice (15 mL)
  • 1 Tbsp local honey (15 mL)
  • 1 boneless, skinless chicken breast
  •  cilantro, for garnish
  •  1 Kaiser roll(s)
  • 1 arugula (rocket)
 

Combine canola oil, cumin, turmeric, basil, mint, cilantro, ginger, garlic, soy sauce, lime juice and honey in a food processor, and puree.

Marinate chicken breast in refrigerator for 2 hours.
Brush grill with oil. BBQ chicken until internal temperature reaches 165°F(74°C), about 6 minutes each side. Place chicken in Kaiser roll, garnish with cilantro and serve with arugula.

Notes: When I make this I usually make 1½ times the marinade. I reserve some of the marinade before adding the chicken and then use it in the last few minutes of grilling, or just brush it on after for extra flavor.‬
